Recipe: Mississippi "Mug" Pie - Hungry Girl
I'm a Southern girl who LOVES sweets... I guess this recipe is perfect for me! I watched the making of this lovely dessert on Hungry Girl.This show is always helpful in taking some of my favorite dishes and foods and tweaking them to make them healthy. What can I say? I LOVE to eat! But some of the foods I really like aren't worth going to the gym for.
Ingredients:
8-10 oz. coffee mug
3 devil's food cake mix (not packed)
1 tbsp. fat-free liquid egg substitute (like Egg Beaters Original)
One 25-calorie packet hot cocoa mix (like Swiss Miss Diet or Nestlé Fat Free)
1 tsp. mini semi-sweet chocolate chips
One 60-calorie sugar-free chocolate pudding snack (like the kind by Jell-O), divided
Optional: Fat Free Reddi-wip
1 tbsp. fat-free liquid egg substitute (like Egg Beaters Original)
One 25-calorie packet hot cocoa mix (like Swiss Miss Diet or Nestlé Fat Free)
1 tsp. mini semi-sweet chocolate chips
One 60-calorie sugar-free chocolate pudding snack (like the kind by Jell-O), divided
Optional: Fat Free Reddi-wip
Directions: (1 serving)
1. Spray a large microwave-safe mug with nonstick spray. Add cake mix, egg substitute, cocoa mix, and 2 tbsp. water. Mix well.
2. Add chocolate chips and about one-third of the pudding to the mug, and stir gently to combine. Microwave for 1 minute.
3. Fluff with a fork, and then gently mix in the remaining pudding.
4.Microwave for 1 more minute.
5.Let cool slightly. Top with Reddi-wip.
